- Lay them on a tray individually and let them dry. Cut into triangles and bake in a preheated oven 350 °F (175 °C) for 6 minutes then turn them over and bake for a further 6 - 9 minutes until slightly colour.
- Place the chopped avocado, tomato, spring onions, kalamata olives, parsley stalks and pickled jalapeño on top of the tortilla chips. Place the bresaola slices on top and sprinkle with the cumin seeds and quesillo de Oaxaca.

- Place under a medium hot grill for 5 minutes.
