This recipie was inspired by Esther Clarke from BBC good food but I've tweaked mine a little. It's so easy to make and packed full of flavour. The kids loved it too! This can be a really cheap dinner but using better quality sausages will make all the difference!!

  1. 3 tbsp olive oil
  2. 1 onion finely chopped
  3. 3 garlic cloves crushed
  4. 1/4 tsp chilli flakes (more if you like heat)
  5. 1/2 tsp fennel seeds
  6. 2 sprigs rosemary, leaves chopped
  7. 1 tbsp brown sugar
  8. 2 x 400g tins chopped tomatoes
  9. 6 pork sausages
  10. 150 ml whole milk (semi will work just as well)
  11. 1 lemon zested
  12. 350 g your favourite pasta shape
  13. Grated parmesan or cheddar with a small bunch of fresh parsley

Steps to make to make Sausage Ragu

  1. Heat 2 tbsp of oil in a saucepan over a medium heat. Fry the onion with a pinch of salt for 5 mins. Add garlic, chilli, fennel and rosemary then cook for a further 1 minute. Add the tinned tomatoes and simmer for 20 mins.
  2. In a separate pan heat the remaining oil over a medium heat. Squeeze sausage meat from skins and fry breaking up with a wooden spoon for 5 mins or until golden. Once cooked add your sausage meat to the sauce along with the milk and lemon zest, simmer for a further 5 minutes.
  3. In a separate saucepan cook your favourite pasta according to packet instructions. Fuscilli or Rigatoni work really well!! Once the pasta is cooked mix thoroughly with the sauce and sprinkle with your desired cheese and fresh parsley.
